Ingredients: 1 kg of tomatoes (preferably ripe), 200 grams of bread (we use stale bread that was left over from the previous day), 0.25 liters of extra virgin olive oil (EVOO), a little salt and vinegar, a clove of garlic (optional)
Put the sliced bread, in the quantity previously defined, in the blender and add all the liquid ingredients at the same time so that the bread is well soaked. Peeled tomatoes, garlic clove and salt are added to the mixture. Once we have all the ingredients we will have to adjust to obtain the salmorejo more or less liquid. This is achieved by adding more bread or more oil. When we have everything together in the container, we grind it all up. And basically with this you make a good Salmorejo.
